These healthy and delicious fruit recipes include fruit which are a great sources of beta carotene which turns into Vitamin A. Vitamin A has been shown to dramatically reduce infections. Many fruit also contain Vitamin C and B6 which are very effective antioxidants.

Five Fruit Salsa "This delicious fruit recipe is excellent with cinnamon chips".

INGREDIENTS:

2 cups chopped cantaloupe

6 green onions, chopped

3 kiwifruit, peeled and finely chopped

1 medium navel orange, peeled and finely chopped

1 medium sweet yellow pepper, chopped

1 medium sweet red pepper, chopped

2 jalapeno peppers, seeded and chopped

1 (8 ounce) can unsweetened crushed pineapple, drained

CINNAMON TORTILLA CHIPS:

10 (8 inch) flour tortillas

1/4 cup butter, melted

1/3 cup sugar

2 teaspoons ground cinnamon

1 cup finely chopped fresh strawberries

DIRECTIONS:

In a large bowl, combine the cantaloupe, onion, kiwi, orange, peppers and pineapple. Cover and refrigerate for 8 hours or overnight. For chips, brush tortillas with butter; cut into eight wedges. Combine sugar and cinnamon; sprinkle over the tortillas. Place on ungreased baking sheets. Bake at 350 degrees F for 10-14 minutes or just until crisp. Just before serving, drain salsa if desired. Stir in strawberries. Serve fruit salsa with cinnamon chips.

Apple Salad "Great fruit recipe the whole family will love".

INGREDIENTS:

1 cup creamy salad dressing, e.g. Miracle Whip

1 cup peanut butter

1/2 cup white sugar

1/2 cup distilled white vinegar

1 cup diced red apple

1 cup diced yellow apple

1 cup halved red grapes

1/2 cup peanuts

1/2 cup miniature marshmallows

1/2 cup raisins

1/2 cup diced celery

DIRECTIONS:

In a large bowl, whisk together the salad dressing, peanut butter and sugar until smooth. Add the vinegar, whisking until dressing is creamy. Add additional vinegar to get creamy consistency, if necessary. Add the apples, grapes, peanuts, marshmallows, raisins and celery to the dressing mixture and toss until evenly coated. Serve immediately.

Mango Avocado and chicken Salad "This great fruit recipe offers an unbelievable chicken salad".

INGREDIENTS:

2 tablespoons brown sugar

1/4 cup water

1/3 cup lime juice

1/2 cup chili garlic sauce

4 cups shredded, cooked chicken

2 medium mangos - peeled, seeded and diced

2 avocados - peeled, pitted and diced

1 (10 ounce) package spring lettuce mix

DIRECTIONS:

In a saucepan over medium-high heat, stir together the brown sugar and water. Bring to a boil, then pour into a medium bowl. Stir in the garlic chili sauce and lime juice. Set the dressing aside. In a large bowl, toss together the chicken, mangos and avocados. Arrange the spring salad mix on serving plates, then top with a few spoonfuls of the chicken mixture. Pour dressing over the top.

Breakfast Fruit Salad "This fruit recipes is great for breakfast or brunch".

INGREDIENTS:

2 cups cubed cantaloupe

2 large red apples, chopped

1 cup red or green grapes

1 medium firm banana, sliced

1/2 cup lemon yogurt

1 tablespoon orange juice concentrate

DIRECTIONS:

In a serving bowl, combine the fruit. Combine the yogurt and orange juice concentrate; drizzle over fruit.

Blueberry Lemon Parfait "Delicious, healthy, quick fruit recipe".

INGREDIENTS:

2 cups fresh or thawed frozen blueberries

2 (8 ounce) cartons non-fat lemon yogurt

10 gingersnaps, crumbled

DIRECTIONS:

In each of four parfait glasses or tall wineglasses, put 1/2 cup blueberries, followed by 1/2 cup yogurt, then crumbled gingersnaps.

Baked Stuffed Papayas (Jamaica) "This Jamacian fruit recipe is a must try".

INGREDIENTS:

1 pound ground beef

1 medium onion, chopped

1 clove garlic, minced

1 (16 ounce) can whole tomatoes, drained

1 jalapeno pepper, minced

1/2 teaspoon salt

1/4 teaspoon pepper

4 (12 ounce) papayas

2 tablespoons grated Parmesan cheese

DIRECTIONS:

Cook and stir beef, onion and garlic in 10-inch skillet over medium heat until beef is light brown; drain. Stir in tomatoes, jalapeno pepper, salt and pepper; break up tomatoes with fork. Heat to boiling; reduce heat. Simmer uncovered until most of the liquid is evaporated, about 10 minutes.

Cut papayas lengthwise into halves; remove seeds. Place about 1/3 cup beef mixture in each papaya half; sprinkle with cheese. Arrange in shallow roasting pan. Pour very hot water into pan to within 1 inch of tops of papaya halves. Bake uncovered at 350 degrees F until papayas are very tender and hot, about 30 minutes.

Mango Salsa "Delicious fruit recipe that's great with cinnamon chips".

INGREDIENTS:

1 mango - peeled, seeded and chopped

1/4 cup finely chopped red bell pepper

1 green onion, chopped

2 tablespoons chopped cilantro

1 fresh jalapeno chile pepper, finely chopped

2 tablespoons lime juice

1 tablespoon lemon juice

DIRECTIONS:

In a medium bowl, mix mango, red bell pepper, green onion, cilantro, jalapeno, lime juice, and lemon juice. Cover, and allow to sit at least 30 minutes before serving.

Fruity Mango Roll Ups "This roll up is a awesome fruit recipe the whole family will love".

INGREDIENTS:

1/3 cup whipped cream cheese

2 burrito size whole wheat tortillas

1 medium ripe mango, peeled, pitted and cut

2 kiwi fruit, peeled and cut into 8 wedges

2 tablespoons honey

¼ teaspoon cinnamon

DIRECTIONS:

Spread cream cheese over tortillas and place mango and kiwi over 2/3 of the surface. Stir together honey and cinnamon and drizzle over top. Roll up tightly. Gently squeeze to secure ingredients then cut into 1/2-inch thick slices.
